History of Baking
Baking has been many cultures' favorite technique for creating snacks, desserts, and accompaniments to meals for many years. Now, it is very well-known as the method for creating sweets and all sorts of wondrous mouthwatering pastries. In ancient history, the first evidence of baking occurred when humans took wild grass grains, soaked it in water, and mixed everything together, mashing it into a kind of broth-like paste. Then, the paste was cooked by pouring it onto a flat, hot rock, resulting in a bread-like substance. Later, this paste was roasted on hot embers, which made bread-making easier, as it could now be made anytime fire was created. Around 2500 B.C., records show that the Egyptians already had bread, and may have actually learned the process from the Babylonians. The Greek Aristophanes, around 400 B.C., also recorded information that showed that tortes with patterns and honey flans existed in Greek cuisine. Dispyrus was also created by the Greeks around that time and widely popular; was a donut-like bread made from flour and honey and shaped in a ring; soaked in wine, it was eaten when hot.In the Roman Empire, baking flourished widely. In about 300 B.C., the pastry cook became an occupation for Romans (known as the pastillarium). This became a very highly respected profession because pastries were considered decadent, and Romans loved festivity and celebration. Thus, pastries were often cooked especially for large banquets, and any pastry cook who could invent new types of tasty treats, unseen at any other banquet, was highly prized. Around 1 A.D., there were more than three hundred pastry chefs in Rome alone, and Cato wrote about how they created all sorts of diverse foods, and flourished because of those foods. Cato speaks of an enormous amount of breads; included amongst these are the libum (sacrificial cakes made with flour), placenta (groats and cress), spira (our modern day flour pretzels), scibilata (tortes), savaillum (sweet cake), and globus apherica (fritters). A great selection of these, with many different variations, different ingredients, and varied patterns, were often found at banquets and dining halls. To bake bread, the Romans used an oven with its own chimney and had grain mills to grind grain into flour.Eventually, because of Rome, the art of baking became widely known throughout Europe, and eventually spread to the eastern parts of Asia. Bakers often baked goods at home and then sold them in the streets-children loved their goods. In fact, this scene was so common that Rembrandt illustrated a work that depicted a pastry chef selling pancakes in the streets of Germany, and young children surrounding him, clamoring to get a sample. In London, pastry chef sold their goods in handcarts, which were very convenient shops on wheels. This way, they developed a system of "delivery" baked goods to people's households, and the demand for baked goods increased greatly as a result. Finally, in Paris, the first open-air café of baked goods was developed, and baking became an established art throughout the entire world.
Baking Tips
Most people have a real basic idea about what they need when they set out to do baking at home, but most people don't have the background to know what works well and what does not, in the baking tips and tricks that I am going to show you will make your baking experience much more interesting and your work easier.Baking Tip #1. Using tin baking pans is what they used in the 40's and 50's and they worked well but they didn't distribute the heat through the pan very well, by using a heavy gage aluminum baking pan the heat will be distributed through the pan a lot better giving you a much more evenly baked cake without any burn spot.Baking Tip#2. Everyone tries to get a really smooth icing on their cake before decorating it but it just doesn't want to smooth out, well here is the way you do it. After you get the icing on the cake as smooth as you can dip the icing spatula in hot water and wipe in a towel to take off the water and lightly smooth out the icing, the heat from the spatula will melt the shortening in the icing causing it to become smooth. You will need to repeat this as many times as necessary.Baking Tip#3. Cake ruffle around the base of your cake will make it much more appealing and only takes a moment to apply it.Baking Tip#4 To make a better box cake mix use 4 medium eggs, 1/3 cup of vegetable oil, 1 -1/4 cup cold water, 2 ounces pudding mix, this will give you a moister cake with a fluffier texture.Baking Tip#5. When making cookies that you are going to roll out with your hands use an ice-cream scoop to dip them out and save yourself a great amount of time and they will also be the same size.Baking Tip#6. Having cookies all the same size on a baking pan causes them all to bake more evenly and they will all come out of the oven looking great.Baking Tip#7. When baking sugar cookies bake them on the two upper racks of your oven, this will cause them to bake more evenly because they won't get a lot of bottom heat on some and not on others. You want even browning on all.Baking Tip#8. When baking cookies rotate the pans at the half point of the baking time.Baking Tip#9. Always use parchment on your baking pans when baking cookies, it makes a lot easier.Baking Tip#10. When baking a cake don't grease or flour your pan, just use parchment paper on the bottom of your pan and when the cake has been cooled cut around the sides of the pan with a sharp straight blade knife then dump the cake out onto the table and remove the parchment before assembling.

Common Baking Mistakes
Whether you are a seasoned cook or a beginner in the kitchen, chances are you have experienced some common baking mistakes. Everyone, regardless of their skill level with cooking, will make some type of blunder while they are learning. Some of the usual accidents happen in preparation, while others happen when the recipe is almost finished. Continue reading to learn about the most common baking mistakes and how you can avoid them. The OvenTo many people's surprise, calibrating an oven is one of the most important things you can do to avoid common baking mistakes. How many times have you cooked something, only to pull it out when the timer goes off to see that it is undercooked or overcooked? This is due to the fact that your oven's thermometer may be inaccurate in relation to the dial setting you choose. When you choose a temperature, it is not guaranteed to cook your food at that degree. It requires calibration by a certified technician who is trained to test the accuracy of your oven and reset it to the appropriate level. This way, you will be sure that your food will cook as it is supposed to, according to the directions you are following.Another one of the most common baking mistakes with regards to the oven is opening it before you are meant to. When a recipe calls for a baking time of 20 minutes, opening the oven even at 15 minutes may be a terrible idea. When you pull open the lid, you are releasing the heat into the kitchen that has taken some time to fill up. It takes time for that heat to be replaced, so the temperature inside the oven drops significantly when you open the door. This interrupts the cooking process, which can change your dish. Resist the temptation to check on your dish until it is nearly close to the time it should be ready. If your oven is calibrated, this should not be a big problem. That is why it is recommended to do this in order to avoid other common baking mistakes. The IngredientsThere are several different types of accidents that can happen with regards to ingredients used in recipes. Usually there is some type of error in the type of ingredient used, the quantity, or the quality.Changing the proportion of ingredients you use for a particular recipe is usually a bad idea. Often times the directions have been laid out in a very specific way to result in a specific taste and consistency. If you change the proportions of what you put into the mix, you risk changing these tried-and-true elements of food. Even the smallest change can result in a total disaster. One single egg or one single tablespoon of salt can throw off an entire dish and leave you wondering, "What did I do?"Another way that ingredients make their way into the list of common baking mistakes is by being substituted incorrectly. Many people feel turned off by recipes that call for high-fat and high-cholesterol ingredients. Therefore, it is a usual practice for these people to use the low-fat, low-sugar, and low-cholesterol varieties of their favorite ingredients. This turns out to be a wrong decision when a recipe relies on the fat or consistency of the ingredients they are wanting to substitute out of the mix.If you change the proportion of the type of ingredients you are using, it can ruin the dish you are preparing. Adding too much liquid like water, oil, or milk to a dish can make it too thin, watery, or oily. It is also possible that by adding too much flour that you are making the batter too lumpy or thick. Making changes like this alters the flavor and consistency you are looking for. That is due to the formulaic nature of recipes. Try to follow them to the best of your ability. If you are having trouble, research before you substitute ingredients or change proportions. The Timing and TemperatureSome people think they can outsmart the directions they are given, and some people feel more intuitive about what they are reading when they decide to change the timing. No matter what the reason, it is often thought that you can change the timing of a dish by altering the temperature you are cooking the dish, for example. This could not be more false! Some dishes are extremely specific in the way they need to be prepared. This is almost always true for the temperature the food must be cooked at. Certain ingredients obviously need to be cooked at a certain degree for safety reasons, like eggs. Others are not dependent on temperature for bacterial control, but rather for flavor and consistency. Something that is meant to be cooked quickly at a high temperature will come out differently when it is experimented with at a low temperature for longer duration. If you decide to alter the timing and temperature of your cooking project, be aware you may be experimenting in uncharted territory. You do not want to ruin a dish just because you were not careful or aware of the time needed to bake the dish at a certain temperature. Most of the common baking mistakes mentioned above can be easily avoided with the right care and focus during your cooking projects. Usually, the accidents in the kitchen occur with some type of preparation error that comes from good intentions. You might be trying to save time or make your recipe larger for a big group of hungry eaters. You could be feeling considerate of your health and the health of others by using different ingredients. It is important, however, to focus on the specific directions you have and follow the basic rules when baking if you want to ensure success.Use your best judgment when it comes to experimenting with new recipes or dishes that you are not sure of how to prepare. Sometimes there are not clear guidelines or instructions to follow, so you may have to make some decisions on your own. Do research whenever possible, and ask someone you trust for advice when you really get stuck. Measure correctly and time appropriately. You will be thankful for avoiding common baking mistakes when you are enjoying your meal or dessert with family and friends.
