The Italian Baker, Revised: The Classic Tastes of the Italian Countryside--Its Breads, Pizza, Focaccia, Cakes, Pastries, and CookiesWho can resist bruschetta rubbed with garlic and drizzled with olive oil, almond-studded biscotti dipped in coffee or wine, and, of course, a thin-crusted pizza with fresh, sweet tomatoes and tangy mozzarella? These Italian classics that Americans know and love are just the beginning; there are a wealth of other equally delicious breads and sweets waiting to be discovered.

In this groundbreaking classic—now thoroughly updated for today’s modern kitchen—Carol Field introduces artisanal doughs and techniques used by generations of Italian bakers. Every city and hill town has its own unique baking traditions, and Field spent more than two years traversing Italy to capture the regional and local specialties, adapting them through rigorous testing in her own kitchen.

Field’s authentic recipes are a revelation for anyone seeking the true Italian experience. Here’s a chance to make golden Altamura bread from Puglia, chewy porous loaves from Como, rosemary bread sprinkled with coarse sea salt, dark ryes from the north, simple breads studded with toasted walnuts, succulent fig bread, and Sicilian loaves topped with sesame seeds.

The Italian Baker is the only comprehensive book, in English or Italian, to cover the entire range of Italian baking, from breadsticks and cornetti to focaccia, tarts, cakes, and pastries. There is even a chapter on using leftover bread—with recipes ranging from hearty Tuscan bread soup to a cinnamon and lemon-scented bread pudding.

Winner of the International Association of Culinary Professionals Award for best baking book, The Italian Baker was also named to the James Beard Baker’s Dozen list of thirteen indispensable baking books of all time. It has inspired countless professionals and home cooks alike. This latest edition, updated for a new generation of home bakers, has added four-color photography throughout, plus new recipes, ingredients and equipment sections, source guides, and weights. One of the most revered baking books of all time, The Italian Baker is a landmark work that continues to be a must for every serious baker.

Gluten-Free Pizza Crust Recipe

I am continuing to be stretched by my own restrictions as well as others who are looking for recipes free of many of the common allergens including eggs and nuts. I wasn't sure how it was going to be replacing the eggs with the flax seed meal. My husband even said he was "scared of this one." He actually thought it was going to taste like cardboard when I told him what the ingredients were.We were all pleasantly surprised. The crust was a bit crispy on the outside and chewy on the inside. It held together very well. And the crust had a very nice flavor, kind of nutty even though I didn't use any nuts. And the last minute idea of adding the roasted butternut squash ended up being a great idea. Not too long ago I never would have thought that you could bake with ground up seeds and nuts and then make things like pizza. If you haven't done this and are on a limited diet, give this recipe a try. You might actually feel like you're eating pizza again!Soak and Dehydrate Seeds first:An important aspect of all recipes that use ground up seeds and nuts is that they should be properly soaked and dehydrated, then ground up. After you have dried the seeds and nuts, you can use a food processor to grind them into a fine flour. My old food processor couldn't do this very well so I ended up using a coffee grinder which works well but can only hold so much at once. I got a new food processor though and hope that it will grind the nuts and seeds up fine enough for flour. As far as I know, flax seeds do not need to be soaked and dehydrated the same way other seeds and nuts do. I recommend soaking, drying and grinding seeds and nuts in large batches. I have a dehydrator that holds many shelves of nuts and seeds so I can do several different kinds at once. If you don't have a dehydrator, just use as many pans of nuts or seeds in your oven as possible. (@ no warmer than 150 F.) Then I usually grind half of each kind to make flour out of them as well as have some whole seeds and nuts for other recipes. Here is the recipe:Gluten free Pizza Crust (grain, egg, nut, gluten, dairy, sugar and yeast free)Ingredients: 1 c ground pumpkin seeds, soaked and dehydrated
1 c ground sunflower seeds, or a little more depending upon consistency, soaked and dehydrated
1 tsp salt
2 Tbsp ground flax meal
6 Tbsp boiling hot water
2 tsp olive oil
1 tsp honey
1/2 tsp garlic powder or 1-2 cloves of fresh pressed garlic
2 tsp total of any of the following: dried parsley, marjoram, oregano and/basilSteps: Preheat oven to 350 degrees. Grind the seeds before measuring out 1 cup each. Combine the flax seed meal and hot water and let sit for 5 minutes. Combine all of the ingredients together in a mixing bowl. I like to knead the dough with my hands until everything is mixed. The dough will be very stiff. Add more flour if dough seems too wet and a little more olive oil if dough seems too dry.
Grease a cookie sheet and sprinkle it with coarsely ground pumpkin seeds. Pat the dough into a ball shape and place it in the middle of the cookie sheet. Beginning in the center and moving outwards, squish the dough flat with your hands. I like to make the edges slightly raised for the pizza dough.
Bake for 20 minutes (or longer if it looks very wet). Remove from oven, top with sauce and toppings, then return to oven for as long as it takes for the toppings to get hot and cheese to melt if you are using cheese. For my pizza, I used Bionaturae bottled strained tomatoes and bottled tomato paste, garlic, salt, honey and Italian herbs to make my sauce. Bionaturae uses glass bottles for these two products, which I love because they are BPA free and GAPS friendly. Compared to other store bought tomato sauces that are free of sugar, it is also much less expensive to make the sauce this way.I also added some leftover cooked ground beef or turkey that I had made for another dish earlier in the week as well as roasted butternut squash fries I had made that afternoon as a snack.I hope you enjoy this allergen-free pizza crust! Let me know how you topped yours! I would love this crust with a yummy pesto sauce.Enjoy!

A Delicious and Healthy Pizza Recipe in 7 Easy Steps

Health is wealth as they say. In this age of technology where everything comes lightning fast and people seems to get stuck in a nine to five desk job with unhealthy lifestyles, maintaining to be healthy and fit is becoming a tedious task. Some exercise which is good and some watch what they eat and this recipe is actually to help on the healthy eating.Who's among us don't like pizza? Of course everyone wants a piece of it. But there's a dilemma we are facing just thinking about eating one: delicious pizza isn't healthy and healthy pizza isn't delicious, right? Or if there's an available veggie pizza it turns out it cost that much more than your regular meaty pizza and it's not available a few blocks from your home. This pizza recipe is a personal recipe made to fulfill a craving pizza lover who needs to start eating healthy without truly giving-up the delicious food.Pizza Spectrumpizza crust tofu (cubed or diced into tiny bits)butter or oilmushroomspineapple tidbitscucumbertomato saucegreen bell pepperEdam cheesemozzarellaProcedure:1. Pre-heat your oven at 375 F (190 C) for 20 minutes.2. Lay your pizza crust in a baking pan.3. Spread the tomato sauce evenly on top of the crust. You can actually use any kind of brands of tomato sauce but I prefer Del Monte's Gourmet selection since it has already that distinctive classic taste that you don't need to add anything because the sauce is complete in itself.4. Then add the grated cheese. For this particular recipe I used Edam cheese since that's what we have available. Though it's perfect since it's a bit salty so it became also a substitute for salt.5. Meanwhile, fry the tofu in butter or oil. I prefer the tofu almost grounded for it's more crunchy and will appear and taste like unsalted chicharon. But if you don't like crunchy you can just slice it into cubes and don't over fry it so this way it will taste and feel like meat. Then sprinkle it on top of the crust.6. Next add the remaining ingredients: cucumber, mushrooms, pineapple, and bell pepper and manage to decorate the pizza as well while adding them. Then sprinkle the grated mozzarella on top.7. Bake for 10 to 15 minutes or until crust is brown. Then serve with hot sauce or ketchup.

All Natural Ground Beef Pizza Recipe With Green Peppers, Mushrooms, Onions and Olives

We all know that pizza is cheap these days, but for a really filling dinner with all natural ingredients, you can't beat making your own pie at home. It may take a little prep time, but it is well worth the work. A little teamwork or pre-planning can make a difference in prep time too. Get the whole family involved and the pizza will be made in no time.Ingredients:Dough Mix (non yeast dough):2 cups flour
½ tsp cream of tartar
½ tsp baking soda
1 cup warm water
2 Tbsp canola oilTopping:3 medium tomatoes sliced
½ lb of natural ground beef
1 green pepper chopped
6 mushrooms sliced
½ onion chopped
1 tsp oregano
1 tsp basil
1 tsp thyme
1 tsp minced garlic
2 Tbsp canola oil
Sliced black olives
2 cups mozzarella cheeseDirections:1. Mix dough ingredients, cover and let rest for 20 minutes. Pre-heat oven to 425 degrees.
2. Knead dough just to remix everything and add flour if necessary to get a silk like consistency, it should not be sticky.
3. Pat dough out into large circle onto pizza stone, roll out onto stone using rolling pin until it forms a large circle, then pinch edges to hold topping better.
4. Cook in oven without topping for at least 10 minutes. Cook beef with onions until beef is nearly done, then add mushrooms, green pepper, basil, oregano, thyme, oil and garlic.
5. Take pre-cooked dough out of oven and put sliced tomatoes on top of the dough, then add the rest of the topping (beef etc), then olives and cheese on top.
6. Cook pizza for another 10-15 minutes until crust is golden brown. Do not over cook crust or burn.About the dough mix: this dough does not require yeast. For those who suffer from abdominal bloating or gastrointestinal troubles including gas, following a yeast free diet can be quite helpful. Many people have never gone even a day without eating yeast so they don't realize the difference. There are also many other ways to alter this recipe. You could cook the tomatoes with the beef so they get mixed in, or add in 2 Tbsp of tomato paste and some water to make a sauce consistency. In this case, you will need to add a little salt as well, most likely about ½ tsp.You might also experiment with different cheeses. Some suitable choices might include Cheddar, Jack, Colby, Romano, Parmesan, Provolone, and feta. You can mix many cheeses together to give the pizza a completely different feel. A little extra Parmesan with garlic is very delicious.Different meats or no meat at all can also be a great way to alter this pizza to suit the tastes of your family and to keep dinner time fresh. Pizza can be customized by section, which makes it a great food for young families with kids. If one doesn't like mushrooms, you just don't add it to their section, if the other hates tomatoes, off they go from her section. This pizza is very healthy and can cost roughly $10 depending on where you live. Although fast food pizza can seem cheaper, the reality is that you will see this pizza to be more substantial and free of preservatives or unnecessary ingredients. Additionally, you can make two pizzas at once, add a salad or a simple soup with some breadsticks to fill out the meal.

A Delicious Gluten Free Pizza Recipe

One of the most popular foods of all time is pizza and everyone seems to love it, from young to old, and from meat lovers to vegetarians. The universal appeal of pizza is simple: delicious crust, savory tomato or white sauces and the toppings that seem to be unlimited in options. For those who must limit their intake of gluten due to celiac disease, there is a marvelous gluten free pizza recipe that can make eating pizza a joy and a pleasure without the worry of the wheat gluten side effects.Creating a delicious pizza without the wheat flour is actually something that is not only possible but simple. There are a few important tricks to know and the ingredients will be a bit different but the outcome is the same and some say even better! A thin crust pizza is within reach for those who may have thought they could never eat pizza again. The gluten free pizza recipe that can bring pizza back to the table for those with gluten intolerance is created from many of the same ingredients as mainstream pizza. The crust will be created from alternative flour, sometimes rice flour is used and there are others that can also be chosen for their flavor and suitability to the dough.Toppings for the pizza will be nearly identical to those used on wheat pizzas, the difference is that when you are creating this specialty pizza, you will need to carefully read the labels and be on the lookout for those products that use gluten in them. One example is pepperoni, there are some that include gluten as a binding or filler and for that ingredient, use the specifically labeled "gluten free" brand. The same rule holds true for the sauces you use. Making them from scratch ensures purity and if you use a pre-made store bought brand, be careful to check the label for any stray gluten that you may not expect. Here is a simple recipe to get you started. This is the recipe for the crust. Mix 1 cup tapioca flour, two teaspoon of unflavored gelatin powder, two teaspoon salt, two teaspoons of xanthan gum, one package yeast granules, two teaspoon of sugar, three teaspoons of olive oil, 1 teaspoon of cider vinegar, 1/2 to 1 cup of lukewarm water. Mix into a dough and roll it onto a greased pizza pan then bake your pizza in a 400 degree oven for 10 minutes. The gluten free pizza recipe can bring the joy of pizza parties, pizza with movies and plain old fashioned pizza dinners back to the family who has been careful about the special dietary needs of someone in the home.

Pizza Crust Recipe Number Two - The Quicker, Improved Gluten Free Recipe Your Friends Will Love

Now I know I've already posted an article with a recipe for Gluten Free pizza crust. With my other recipe you had to bake the pizza dough until it was ready, take it out, put on your ingredients, and then bake it some more. This is how high-end pizza restaurants make their pies, and really is a gourmet recipe sure to impress the whole family and friends. However not everyone has the time it takes to put together my other recipe. This one doesn't require yeast, and it's very quick to make. I was hesitant at first in giving this recipe, but when asking my neighbors which one they liked more they said it didn't matter to them. Here's a yeast-free, quick to make version of my Gluten Free Pizza Crust recipe.Ingredients:½ cup milk
1 teaspoon Gluten free baking powder
1 large egg
1 teaspoon salt
¼ cup potato flour
1/8 cup olive oil
1 tablespoon sugar
1 cup Gluten free flourDirections:So we'll begin by Pre-heating the oven to 350 degrees.
Grease up a pizza pan, (or cookie sheet) with some cooking spray.
Grab a medium-sized bowl, and add all your dry ingredients into it. Whisk it together well, you want to make sure there are no clumps of anything, especially your baking powder.
Get a large measuring cup, (I use only Glass) and whisk together your eggs, oil and milk. Make a note of exactly how much liquid there is, because you'll need one cup of total liquid. If you come up short then you can just add extra milk.
Slowly pour your wet ingredient mixture into your dry bowl. Use a wooden spoon to stir together until it's well mixed.
Set the dough in a pan, and work it with your hands so that everything spreads evenly onto the bottom. Grab a brush and brush your dough with olive oil. Throw on all the ingredients your heart desires.
Place onto the top rack of your oven, and leave until your dough is crispy golden in color, and cheese is melted. This usually takes around 30 minutes, sometimes less depending on the oven your using.

Home Made Pizza Recipe

Do your family like fast food but you don't want them eating junk? I have a 20 month old son who typically loves the food I won't let him eat. I discovered recently that he adores pizza but of course I certainly didn't want him eating those frozen ones you get as you really don't know what is in them but I always thought pizza was so difficult to make. I was talking to my sister-in-law about it and she gave me this recipe for home made pizza and I was a bit nervous but said I would give it a try to see what it was like.Boy was I pleasantly surprised. Firstly at how easy it was and secondly about how much tastier it was. Even my husband (who likes his pizza) said he wouldn't buy any more pizza and wanted the home made one in future. I like that fact that you can pick your own toppings and can put plenty of them on and not be trying to spread bits around the pizza. My son raves about them now and is always shouting for pizza. The recipe below makes two generous sized pizzas but I roll them over very very thin so if you like thicker bases maybe you should increase the quantities. The first time I made it I thought I hadn't nearly enough dough but there really is quite an amount when you roll it out. Don't be put off by the fact you have to leave it for an hour. I usually make the dough around lunchtime when I put my son down for his sleep and then take it out of the hot press that evening when I am ready to roll it out. Also the mixture was too wet so I just kept adding bits of flour until it was about right and it didn't affect it in any way. So here's the recipe, I have no idea where my sister-in-law got the recipe but it's a really nice one.Ingredients:8oz strong plan white flour1 tsp (level) salt1 1/2 tsp yeast3 - 4 fluid oz hand hot water1/4 tsp sugar1 egg1 tsp olive oilTomato puree or passata and cheese followed by whatever toppings you requireMethod:Put water in basin and whisk in sugar and yeast. Leave for 15 minutes until a frothy head forms. Sift the flour and salt together and pour into yeast along with the egg (which should be beaten beforehand). Mix to a dough, you may need to add some more water (or in my case a little more flour). You should end up with a soft pliable dough.Knead for 10 minutes. Put into a bowl and put the tsp of olive oil on your hands and put all around the dough. Put back in the bowl and cover with cling film. Put in a hot place for 1 hour. When you are ready to roll out the dough remove it from where it has been and knead for a further 5 minutes before rolling out.Simply add your toppings and cook in a hot oven (about 220 Celsius) for 15 - 20 minutes. I also like to add some herbs on top for a little extra flavour but this is entirely up to you, just experiment and have fun.

Homemade Vegan Pizza Recipe VS Italian Pizza

Since we are in Italy, and since pizza is one of Phil and my favorite meals, we decided to go on a 2-day pizza-tasting extravaganza. In a lunch-dinner-lunch marathon, we enjoyed two Italian pizzas and a homemade vegan pizza recipe. It may be super delicious, but that doesn't mean healthy vegan recipes can't include pizza. Our first tasting was at Borgo Antico, in the Piazza Santo Spirito. It was fantastic. We ordered the classic marinara pizza, which is just tomato sauce with garlic and drizzled with herb-infused olive oil. No cheese, so we didn't even have to look like crazies ordering pizza without cheese! Our next experiment was homemade pizza using a focaccia picked up at the local grocery store. Focaccia is usually made with milk powder, but they had two versions - one without dairy. I piled a mound of vegetables on top since we do love vegetables.I delved into a possible side-career in silent film since there were lots of people in the common room/kitchen and I was feeling a little self-conscious talking to myself on camera. The only downside of a mound of vegetables atop focaccia is that it is fairly challenging to fit into your mouth without making a substantial mess. However, the upside of a mound of vegetables atop focaccia is that it is amazing. Our third tasting was a pizza at a take-out pizzeria, the cheapest one I could find, just to see how it stacks up. We got a vegetarian pizza without cheese (and they didn't even give me a funny look!), that was made fresh while we waited. It was put, piping hot, into a box that we took across the street to eat overlooking the river. They were all great, but Phil and I both liked mine the best, probably because it was loaded with veggies.Prep time: 15 min. Cooking time: 30 min.
Time from start to eating: 45 min.
Makes 2-3 servings.Homemade Vegan Pizza Recipe Ingredients
1 focaccia bread (if you can't find one made without milk powder, try making your own or use whole wheat pitas)
1-2 Tbsp tomato sauce (optional)
4 small tomatoes, sliced
1 Tbsp Italian Herb Mix
1/2 red onion, thinly sliced
1 zucchini, sliced
1/2 eggplant, quartered and thinly sliced
1 Tbsp olive oil (3 tsp)
salt
Homemade Vegan Pizza Recipe Directions1. The key to making a pizza without cheese is that you have to prepare the vegetables as you would to roast them, since they don't have the protective cover of the cheese layer. Do this by rubbing a bit of oil (for protection from the heat) and then a bit of salt (to help them soften) on the vegetables before laying them on your pizza.2. If you like, spread a small amount of tomato sauce onto the focaccia bread. Lay the tomato slices to cover, and sprinkle the herbs and a bit of salt on them.3. Toss the onion with a teaspoon of oil, then with a pinch of salt, and lay them on top of the tomatoes.4. Next, toss the zucchini with another teaspoon of oil, then with a pinch of salt, and lay them on top of the onion.5. Toss the eggplant with the last teaspoon on oil, then with a pinch of salt, and lay them on top of the zucchini. Slicing the eggplant slightly thinner than the zucchini will help them cook in the same amount of time. Put the pizza in the oven at about 350 degrees F, for about 20 minutes or until the vegetables are soft.6. Serve with a simple green salad on the side, and plenty of napkins. I hope you enjoy this homemade vegan pizza recipe, the latest of my healthy vegan recipes.

How to Make a Delicious Healthy Pizza Recipe

There are lots of types of pizza. You can have a thin, crispy crust or a thick, bread crust. There are various pizza sauces, including traditional tomato sauce, spicy sauce or even a parsley infused creamy white sauce. Pizza toppings vary enormously. Pepperoni pizza is the most popular pizza variety but this is only one type. Some people like to stick with a theme when making pizza recipes. They like to use various types of meat for a meat feast pizza, white and green ingredients only for a "white pizza recipe" or the most colorful ingredients they can find for a grilled vegetable pizza. Other people enjoy mixing and matching their pizza toppings or using up anything in the refrigerator that needs to be used up.Tips for a Nutritious PizzaIf you want to make a healthy pizza, there are a few things you can do. Choose a thin pizza crust rather than a calorific deep dish one. Use a tomato sauce rather than a cream sauce and choose your pizza toppings with care.Vegetables are great for topping your homemade pizza recipes because they are colorful, flavorful and they suit any meat, poultry or fish toppings. You can add raw vegetables, grilled vegetables or thawed vegetables to your pizza.Use reduced fat cheese instead of full fat cheese as a healthier topping for your pizza recipes. Goat's cheese and reduced fat mozzarella are a good combination. Hard cheeses like parmesan are also good, firstly because the strong flavor means you will not need to use much and secondly because hard cheeses are lower in fat than soft cheeses. How to Roast Bell PeppersRoasted bell pepper is one of the tastiest toppings you can use on a healthy pizza recipe. Roasting your own peppers is very easy and you can roast red, yellow, orange or green bell peppers. Roasting them makes them succulent, juicy and bursting with flavor. There are various ways to roast a bell pepper. The easiest way is to put a bell pepper over the burner of a gas stove or on your grill. Turn the pepper using tongs and keep cooking it until the skin is black and charred.Alternatively you can broil a bell pepper. Rub vegetable oil all over it first, and then put it on a baking sheet. Use tongs to turn it when the top starts to go black. You can either broil a whole bell pepper or slice it into wedges and broil those. Another method is to cook the bell pepper wedges or strips in a skillet in olive oil. When they are tender, they are done. The easiest way to get the skin off a roasted bell pepper is to put it in a bowl and cover it with plastic wrap. This traps the steam. Leave the bell pepper for twenty minutes then you should find the skin comes off easily. Pull the stem out before you take off the skin. Roasted peppers make a delicious topping for homemade pizza recipes.

Heart Healthy Pizza Recipe That Actually Reduces Cholesterol

Everybody loves Pizza worldwide right? The delicious savory smell of the cheese and the tomatoes and all the other toppings and herbs. If you're not already heading off towards the direction of the refrigerator, stick around and listen up for a moment. If you eat a half of a typical stuffed crust 14 inch pepperoni Pizza you will consume approximately 75 grams of fat. If you have been told to avoid cheese you may despair as you suffer that craving for your favourite food - Pizza! What if there was a type of Pizza that was not only friendly to your heart health, but actually REDUCED your Cholesterol level, the more you ate (within reason). Sounds too good to be true? Well the good news for pizza lovers everywhere is that it is now possible. Unbelievable - a heart healthy Pizza packed with healthy ingredients that is kind to your heart and health.A new type of Cholesterol lowering cheese. The breakthrough came with the introduction of a new type of cheese, which has all the flavour of a mature cheddar, but can be used as a topping for Pizza or Lasagna. In the United Kingdom this product is known as miniCol. This is a healthy alternative to 'normal' cheese and is perfectly safe to eat or cook with, for people with concerns about cholesterol levels. The difference between traditional cheddar and miniCol is that miniCol is made from milk, which has had virtually all of its dairy fat removed and replaced with wheatgerm oil, which is high in polyunsaturated fat and plant sterols. Most plants contain Sterols which are natural substances found as component parts of certain vegetable oils. Plant sterols are effective in lowering cholesterol by blocking the absorption of cholesterol from the diet, and also by stopping the re-absorption of cholesterol produced by the liver. Studies have shown that miniCol is proven to be capable of reducing blood cholesterol levels. You can find out motre information about miniCol here: http://www.emmi-minicol.ch/news/Pizza Margherita Recipe (enhanced)This recipe is for a basic 14 inch Pizza Margherita, but you can easily add further healthy toppings such as tuna, chicken or extra lean beef (raw meat to be marinated and precooked). Mexican Chicken Pizza Recipe - How to Make a Pizza at Home With a Perfect Blend of Ingredients

The ingredients in this Mexican Chicken Pizza are a perfect mixing of flavors. Feel free to add or subtract ingredients depending on what you like best, but this is a great recipe to work from. Fun and easy to make. You can use a large cookie sheet or a couple medium pizza pans to cook on.Mexican Chicken PizzaIngredients:
Frozen Bread Dough (White or Wheat) or Store Bought Pizza crust
A Little Vegetable Oil
Cornmeal

Refried Beans, cooked and thinned with water.
BBQ Sauce, your favorite flavor from the grocery store.
Jack Cheese (or any combo of Jack, Mozzarella, & Cheddar), shredded
Chicken, cooked and shredded
Red Bell Pepper, chopped
Red Onion, chopped
Black Olives, sliced
Jalapeno Pepper, sliced thin, seeds removed (optional)
Cilentro, chopped
Salsa
Directions:Pizza Crust: Defrost one loaf of the frozen bread dough according to directions. It seems to work best defrosting it slowly so it gets large and fluffy before you roll it out using a rolling pin. Put flour on your cutting board so the dough doesn't stick. If it is easier to purchase a premade pizza crust in your grocery store that will also work.Grease your cookie sheet or two medium pizza pans using any kind of vegetable oil. One of my secrets to a good homemade pizza is putting some cornmeal on the pizza pan after you oil it. The cornmeal kind of acts like little ball bearings, keeping the dough from sticking to the pan, plus it adds a great flavor to any pizza.Sauce: This will be your refried beans and BBQ sauce. Cook and crush your beans adding some water to make a thinner paste. Spread on the crust so it is a thin layer. Drizzle with your favorite BBQ sauce. A great mix!Toppings: Spread shredded cheese on pizza to cover. Top with chicken, red bell pepper, red onion, black olives, and jalapeno pepper. Add a little more cheese on top.Bake: 400° for about 15 minutes. Check it occasionally making sure it doesn't overcook. Cheese will be starting to bubble in center. After baking, sprinkle the pizza with cilentro and your favorite homemade tomato salsa to add a wonderful fresh flavor. Some pizzerias will add chopped tomatoes on top for a delectable finishing touch to their pizza, but in this case an authentic mexican salsa will finish your Mexican Chicken Pizza perfectly.
